Picking healthy, ripe olives at the right time, processing them under hygienic conditions, and storing them properly are essential to preserving the oil’s natural quality. Harvest Time, Journey to the Mill & Sorting Process

Olive trees bloom in May and develop fruit throughout the summer. The harvest begins in October and continues until January. Early harvest yields less oil but results in higher quality and more aromatic olive oil. Late harvest increases yield but lowers polyphenol content. At Olyvian, we transport freshly harvested olives to the mill as quickly as possible to preserve their quality. There, the olives are carefully cleaned and processed—each step guided by our commitment to delivering the highest quality, natural olive oil.

Washing, Crushing, Grinding & Malaxation Process

Once separated from branches and leaves, the olives are thoroughly washed in specialized machines to remove all dust, dirt, and residues. They are then crushed—stones included—and ground into a thick olive paste. This paste is kneaded for about 40 minutes at a carefully controlled temperature. During malaxation, a small amount of water is added, and if the temperature stays below 27°C, the process qualifies as "cold pressing." This step is crucial, as it directly affects the oil's aroma, acidity level, and nutritional value.

Separation, Filtration & Packaging Process

After malaxation, the olive paste is processed using decanter machines to separate the oil from the pomace and wastewater. The extracted olive oil is then filtered and stored in dark glass bottles, tins, or stainless steel chrome tanks to prevent contact with light and air. This storage method helps preserve freshness and extends shelf life. At Olyvian, we maintain our commitment to purity and quality throughout the packaging process—striving for excellence in every drop.
